double chocolate chip cookies

I love chocolate chip cookies and while I’m partial to a traditional blonde recipe (here‘s a really good one), I wouldn’t ever say no to a double chocolate version. These stay cake-like and tender for days, and the sweetness has a complex richness to it thanks to brown sugar. I made the cookies travel size here (about two or three bites each), but you could easily make them larger for a hefty treat.

double chocolate chip cookies
  • ​1/4 cup + 2 TB oil
  • 1 teaspoon of vanilla
  • 1½ cups light brown sugar
  • ½ cup cocoa powder
  • 2 eggs
  • ½ tsp salt
  • ¾ tsp baking powder
  • 2 cups flour
  • 1 cup dark chocolate chips
  1. Line a baking tray with parchment paper. Preheat oven to 350 degrees F.
  2. Mix oil and vanilla. Stir in the brown sugar and eggs.
  3. Add the cocoa, salt and baking powder and stir until well combined. Add the flour until just blended. Stir in the chocolate chips.
  4. Bake for 10-12 minutes until just set.
