{things i made} curry pea fritters

These pea fritters contain some hidden flair: curry powder is folded into the mixture and a little bit goes a long way in terms of flavor. Baked and not fried–but still crispy–these veggie patties are a yummy side-dish served with just a squeeze of lemon. I imagine they’d also be delicious in a soft bread like naan or pita with some yogurt, lettuce, and tomato. Curry powder is a bit polarizing in terms of taste, but I find it mild and almost sweet when used in small quantities.

Ingredients:

2 cups of frozen peas

1/4 cup dry bread crumbs (or more depending on texture of mixture)

1 tablespoon fresh lemon juice

1 teaspoon curry powder

1/4 teaspoon salt

1/8 teaspoon black pepper

 

Preparation:

1. Pulse all ingredients in a food processor until smooth, adding more breadcrumbs if necessary.

2. Shape into two-inch wide patties by a heaping tablespoons. Coat patties with bread crumbs.

3. Preheat oven to 375 degrees. Place patties on cooking tray. Spray with olive-oil based cooking spray or brush with olive oil.

4. Bake patties for about 25 minutes or until browned on both sides and heated through, turning once. Serve with lemon wedges.
